Food truck Chameleon Cuisine LLC expanded June 11 with a brick-and-mortar restaurant at 400 E. Walnut St., the former site of Aviary Cafe and Creperie LLC. Husband-and-wife owners Yoni and Alana Vargas have run the Chameleon Cuisine mobile eatery in Springfield since March 2020. They signed a two-year lease with The Big Ugly Building Co. for roughly 1,400 square feet, said Alana Vargas, who declined to disclose the rate or infill costs. She said the winter months proved to be a challenge to maintain sales volumes out of a food truck, which led to launching the downtown eatery. She said eight employees work between the restaurant and food truck. The menu includes tacos, burgers and a mix of seasonal offerings. Prices range $6-$15.50, she said. Chameleon Cuisine first opened in 2017 in San Diego, Vargas said. She and Yoni moved to Springfield last year so she could attend graduate school at Missouri State University….
